A thermocouple connection head is the small housing at the top of a thermocouple probe where the sensor wires terminate and connect to extension cable — it protects the wiring and gives easy access for servicing.
You would buy one separately to replace a damaged/corroded head, build a custom thermocouple assembly, or upgrade to a different style (e.g. explosion-proof, or one with a built-in transmitter).
